Spinach Nuggets

Life has been so hectic! I can't believe how long it has been since my last post, but I'm back today to share this delicious spinach nuggets recipe :)
I have come across a couple of different recipes for these nuggets, ended up adapting it to our taste and came up with something really really tasty!
There's so much healthy ingredients and goodness in it, I hope you'll like it too if you give it try. The recipe is quick and simple to put together, packed with fiber and protein and very little carbohydrates (hello third trimester pregnancy food) :-) it's a great snack or lunch for toddlers too.

Ingredients:
- 1 c. slivered almonds
- 4 tbsp. flax seed
- 1/2 c. whole wheat bread crumbs
- 1 c. shredded sharp cheddar cheese
- 4 c. fresh baby spinach leaves
- 2 eggs
- 1 tsp. basil
- 1 tsp. oregano
- 1 tsp. Mrs. Dash original blend salt free seasoning (or Sea salt if you prefer)

Preparation:

Place almonds and flax seed in a food processor and mix until well crumbled, add spinach leaves roughly chopped by a handful or two at a time, and mix until you get a crumbly dark green mixture.
Place all the other ingredients in a mixing bowl then stir in the spinach, almonds and flax seed green mixture and mix it evenly.
Preheat oven to 350 degrees, coat a cookie sheet and then form your nugget shapes, or make a ball and pat it down. Bake for 15 minutes, turn the nuggets over and then bake for another 10 minutes (25 minutes total baking time).

Pair with your favorite dipping sauce and enjoy!
